For the best BBQ results…

Our cooking fire is placed directly on the ground (grass, stone, or soil). This will leave a dark scar, so please notify your grounds crew about the damage. If this is a problem, please let us know ASAP so we can discuss cooking on alternative surfaces, such as asphalt, concrete, or blacktop. While we cannot place our fires directly on these surfaces, we can raise the fire off them with steel decking.

PRESALE

Pre-selling tickets is the best way to determine the size of your event.

We encourage you to have every member of your group sell a certain amount of pre-sale tickets. This will make it easier to sell and account for tickets.

Pro tip: Make your pre-sale tickets a different color than your same-day tickets so they’re easier to keep track of!

ADVERTISE

Never underestimate the power of high-quality advertising!

To jumpstart your ad campaign, we’ll promote your fundraiser on our events calendar and Facebook page.

We’ll also send you marketing materials that you can personalize and share with your community.

COMMUNICATE

How many people are you expecting to serve? Where? Take-out or drive-through?

Let us know of any special needs you or your guests may have so we can help you create the best experience for everyone.

While we make every effort to accommodate last-minute changes, we ask that you please have your final order to us at least one week prior to the event.

10 Fast Facts About Food Handling

Before you get grilling at your event, make sure you know the basic food handling rules and regulations in accordance with New York State Department of Health. 

  1. The use of “home canned” or home prepared food is absolutely prohibited, both as an ingredient and/or individually served or sold.
  2. Hot food must be maintained at 140 degrees Fahrenheit or above and cold foods at 41 degrees or below at all times.
  3. Keep time between preparation and serving as short as possible. 
  4. Do not pre-portion ahead of time unless proper refrigeration is available.
  5. No bare hand contact is permitted when handling ready-to-eat foods. Plastic gloves, deli paper, or utensils will be permitted.
  6. All food workers must wear clean clothing. 
  7. Hats and/or hair nets are required.
  8. All food workers must be free from illness, sores, and cuts and shall use hygienic food handling practices. No smoking in food stands.
  9. All food items, including ice and single-serve items must be stored off the ground or floor surfaces on stands at a minimum of 6 inches.
