This beer can chicken is everything you want in a summer grill recipe juicy, flavorful meat with crispy, golden skin. It’s infused with the citrusy, hoppy goodness of Resurgence Citmo IPA and made with the Western New York favorite, Chiavetta’s Marinade, because let’s be honest… no Buffalo cookout is complete without it. Here’s what you’ll need:

1 whole chicken (3–4 lbs)

1 cup freshly ground garlic

1/8 cup salt

1/8 cup black pepper

16 oz Resurgence Citmo IPA

32 oz Chiavetta’s BBQ Marinade

1 beer can chicken holder
Directions

In a bowl, mix together the garlic, salt, and pepper. Rub this flavorful blend inside and outside of your chicken. Cover and refrigerate for at least 8 hours — overnight is even better for max flavor.

Remove the chicken from the fridge and pour Chiavetta’s BBQ Marinade all over it. Let it soak up that goodness for 30 minutes at room temp.

Preheat your grill to medium-high heat.

Pour Citmo IPA into the beer can holder and carefully place your marinated chicken over it, standing upright like the rockstar it is.

Place the chicken on the grill and cover. Cook for 2–2.5 hours, checking periodically to prevent flare-ups. You’ll know it’s done when the thickest part of the breast hits 165°F.

Remove from the grill, let it rest for a few minutes (the hardest part, let’s be real), then carve it up and dig in.
